What makes Noctua tick

Born from a love of flour and water (and you can’t forget about yeast!), Noctua is your friendly neighbourhood bakery where you can get more than just the basics. We pride ourselves on our unconventional flavours, expert techniques and impeccable taste in music. Our passion for pastry and commitment to community are our driving forces and inspire us to get as close(ish) to perfection as possible – but we don’t get too hung up on being perfect because, honestly, where’s the fun in that? At Noctua, it’s all about expression over perfection. Come and experience our everything with every bite.

Welcome to Noctua, perfectly imperfect.

Chef Daniel

It all begins with the abuelas.

At the heart of Chef Daniel's culinary journey lie his grandmothers: two remarkable women, both skilled cooks in their own rights, who deeply inspired Chef Daniel. Watching them during his upbringing, their commitment to spreading joy through cooking became evident to him; Daniel soon realized that food isn’t just fuel, it’s a story told through generations and connections made through creativity.

Through his travels, rigorous studies and following in the footsteps of his grandmothers, Chef Daniel has refined his skills and earned recognition in the culinary sphere. He’s managed some of Toronto’s most esteemed kitchens but it’s his commitment to creating that “happy place” for his patrons that truly sets him apart. His mission? To seamlessly blend traditional methods with innovative concepts, whisking diners away to moments, places, or memories with his distinctive flavors (pun 100% intended).

At Noctua, we're all about blending innovation with the finest ingredients, creating culinary delights that are as sustainable as they are tasty. We champion our community artisans and source locally as much as humanly possible – because, why wouldn’t we!? We’re passionate about creating an experience that goes from top to tastebuds and beyond so that you can add just a little bit more joy to your day. Come on by, we can’t wait to share our creations with you.

Organic ingredients

To us, “organic” isn’t a buzzword, it’s a benchmark. Our passion for quality begins with our choice of organic ingredients, sourced with integrity from like-minded partners who share our values (and love of bread). This not only ensures that our goods are better for you and the planet, but also infuses them with flavors that are truly special. By going organic, we're not just baking goodies; we're supporting sustainability, promoting a healthier environment, and serving up baked delights that are wholesome and delicious.

Come and discover our pride and joy – the Organic Butter Croissant. Made with the finest organic butter and flour, each croissant is crafted with care, to ensure that buttery, flaky goodness that’ll leave you weeping tears of joy…maybe. It’s no secret that this one is truly our baby and we can’t wait to share it with you.
